We love coffees that are a little unexpected and this one is one of those coffees. This lot comes from Korgua Estate in the Chuave district of Papua New Guinea, where coffee grows high in the mountains between 1,600 and 1,800 meters. The cherries come from a group of around 40 smallholder farmers who have been working with Sirigine Coffee Producers, an organization founded by longtime coffee farmer Paul Sirigine to help connect local growers with specialty coffee markets.
After harvest, the coffee goes through an anaerobic natural process, creating a cup that's fruit-forward, rich, and full of sweetness. Expect notes of strawberry wine, cacao nibs, and cinnamon tea with a smooth finish that keeps you coming back for another sip.

Sirigine Coffee Producers was founded by Paul Sirigine, a coffee farmer with more than 20 years of experience. Today, the organization works with smallholder farmers across the Chimbu province, helping them produce high-quality coffees while creating more opportunities for their communities.
The coffee comes from the rugged mountains of Chuave, where farming is anything but easy. Coffee is grown on steep hillsides, and most of the work—from caring for the trees to harvesting ripe cherries—is done by hand. The volcanic soil, cool mountain climate, and high elevation all help create coffees with vibrant fruit flavors and lasting sweetness.
Story
Once the cherries reach peak ripeness, they're carefully harvested and placed into anaerobic fermentation, where they ferment in sealed tanks before being dried naturally under the sun on patios and tarps.
This slower process brings out deeper fruit flavors while keeping the cup clean and balanced. The result is a coffee that's bright, juicy, and comforting all at once, with notes of strawberry wine, cacao nibs, and cinnamon tea.
