Milk Chocolate, Black Tea, Wild Berry Jam

High in the mountains of Cajamarca, things move a little slower. Coffee cherries take their time to ripen in the cool air and under the shade of the trees. That extra time shows up in the cup: smooth milk chocolate sweetness, the gentle feel of black tea, and a touch of wild berry jam that adds brightness. It’s balanced, comforting, and easy to enjoy!

This coffee comes from partner farmer Mario Jesús Rufasto in Pariamarca, where his Caturra grows at around 2,000 meters above sea level. The high elevation and cool mountain climate help the cherries mature slowly, building sweetness and clarity before harvest. Carefully washed and dried, the result is a clean, expressive coffee that reflects both the place it comes from and the steady work behind it.

Finca Churupampa is a progressive coffee farm and producer organization located in Chirinos, Cajamarca, led by Eber Tocto and his brothers. Since taking over operations from their parents, the family has transformed Churupampa into a model for environmentally and economically sustainable coffee production.

Today, Churupampa includes 294 certified organic producers and 92 farms currently transitioning to organic, forming a network of 386 member farmers across the region. The organization focuses on quality, farmer training, and regenerative agricultural practices that support both coffee quality and long-term soil health.

Story

Mario Jesús Rufasto is one of Churupampa’s key partner farmers and a close friend of Eber Tocto. Mario worked alongside Eber even before Finca Churupampa was formally founded in 2017, and later joined the organization as a lead member. His farm became organic certified in 2021, and in 2023 he achieved Regenerative Organic Certified® (ROC) status, a reflection of his deep commitment to sustainable farming.

At Churupampa, sustainability goes beyond the farm. The organization operates a composting program where producers send cascara (the coffee fruit skin) from their harvests to the mill. There, it’s combined with materials like bone meal to create nutrient-rich organic fertilizer pellets. These are distributed back to farmers to enrich their soils, strengthening the health of both the land and future harvests.

For Mario, coffee is more than a crop, it’s a way to support his family, strengthen his community, and steward the land for generations to come. Greater Goods is proud to share this Peruvian release and the story behind it!
