This gem was washed at URDD with cherries sorted using mechanical siphon. Depulped then 8-10 hours fermentation without water in ceramic-lined tanks retaining 10-15% mucilage on parchment, rinsed in ceramic-lined channels. Sun-dried under shade on raised beds in 20-30 days at Beneficio Las Segovias.
