Finca El Eden is located in the Samaria district of Palestina, Huila, at 1,500 meters above sea level. The farm benefits from consistent rainfall, rich soils, and year-round flowering, producing coffees with exceptional sensory profiles. Rodrigo’s reputation is built on both innovation and precision, qualities that have earned him top honors in national and international competitions.
For this lot, Rodrigo began by creating a fermentation starter using 10 strains of microorganisms, including Lactobacillus and Saccharomyces, paired with chamomile, mint, rosemary, molasses, and panela. After an initial 190 hours of fermentation, hand-picked and sorted cherries were added for an additional 150 hours before being fully washed and dried slowly over 20–25 days.
Story
The “Green Tea” coffee is a testament to curiosity, craft, and vision. At Finca El Eden, coffee farming is both a family legacy and an ongoing exploration of flavor. Rodrigo’s willingness to push boundaries, from experimenting with fermentation methods to selecting unique varieties — reflects his deep passion for the craft.
One moment that captures his dedication is the painstaking process of sorting and hand-picking only the ripest cherries before they enter fermentation, a step he insists upon to ensure the purity of the final cup.
For Rodrigo, coffee is more than a crop, it’s an expression of creativity and a way to honor Colombia’s place in the world of specialty coffee. We’re proud to share this remarkable lot with you, a reflection of innovation, patience, and the artistry of Finca El Eden.
