Story

The journey of the Chelbesa Danche Honey lot begins at the farm, where only the ripest cherries are carefully selected and delivered to the washing station. Upon arrival, they undergo a meticulous sorting process to remove floaters, ensuring only the highest-quality fruit is used. The cherries are then depulped and left to dry ferment for 2–3 days, a crucial step that enhances the coffee’s signature sweetness and complexity.

From there, the parchment is carefully dried on raised beds for 10–14 days, with constant movement to ensure an even drying process. This honey process, where some of the coffee’s mucilage remains intact during drying, results in a silky, fruit-forward cup with a vibrant yet balanced profile.

The Chelbesa Danche Honey Lot is a testament to the passion, skill, and dedication of Ethiopian coffee producers. Their expertise in cultivation and processing allows this coffee to shine, bringing a beautifully expressive and refined experience to every cup. We’re thrilled to share it with you.
