Our competition coffee was washed at Santa Gema, then depulped before undergoing 12-18 hours of fermentation in ceramic-lined tanks, then rinsed in ceramic-lined channels. This beautiful coffee is then sun-dried on a concrete patio in 10-14 days at Mr. Vilchez's house in Mozonte.
